Selecting Potatoes
Choosing the right potatoes is key for delicious tater tots. Russet potatoes are the best choice due to their high starch content and low moisture.
This helps the tots hold their shape and ensures a crispy outer layer.
Use fresh russet potatoes without any green spots or sprouts.
They’re easy to find and affordable.
Before you start, ensure you have kosher salt on hand to add flavor during the cooking process.
Prepping the Potatoes
Begin by washing 2-3 pounds of russet potatoes thoroughly.
You can peel the potatoes for a smoother texture, although leaving the peels on adds extra flavor and nutrients.
Cut the potatoes into quarters and place them in a pot of cold salted water (about 1 inch above the potatoes).
Bring the water to a boil, then reduce the heat to simmer gently.
Cook until the potatoes are just tender but not mushy, around 7-9 minutes.
Drain them well and let them cool slightly.
Use a box grater to finely shred the potatoes.
It’s important to dry them as much as possible, using a clean dish towel or cheesecloth to squeeze out excess water.
This will help them crisp up when frying.
Shaping the Tots
Once you have grated and dried your potatoes, season them with kosher salt to your liking.
Then, take about 1 tablespoon of potato mixture and shape it into small 1-inch long cylinders.
Arrange the shaped tots on a baking sheet.
If you want, you can freeze them for about 1 hour to make them firmer before frying.
Heat oil to 350°F in a large pan or fryer.
Then, fry the tots in small batches until golden brown, about 3-5 minutes per side.
Drain them on paper towels.
For added flavor, sprinkle with more salt or herbs while they are still hot.
